This is a unique offering from our shop with our own rendition of grind and finish of the Hisamoto gyuto with bolster gyuto.
The western handle has been replaced with a ancient bog oak eastern shaped handle, a full grind has been created for an even thinner grind, and an etch in order to bring more detail and contrast, but the goal was to maintain the original rustic finish by the black smith.
